What are some medium rides at Disney world?

So this Summer i am going to Walt Disney World in Orlando Florida. Even though i have been there 2 times i still want to know what are some medium rides. Now by medium i mean not a baby ride and not a super fast and scary ride, but something in between. Is test track and that water rapids ride a medium ride if it is let me know!!! I am going to be going to Animal kingdom,Hollywood studios, magic kingdom and Epcot. so what rides are best there? Also what rides have fast pes?
